Easter Rainbow Fruit Delight {Giveaway}

A soon as Nestlé sent me some recipes for Easter I decided I wanted to make this Rainbow Delight one. Looks pretty and I really love gelatin combined with milk. One of my favorite favorite desserts back when I was growing up was what we called “Chantilly” (combination of regular gelatin and layers of gelatin with milk). My aunts made it a lot for birthday parties. But I also have to admit, the layers of colors instantly made me want to cook it, si!

Anyways, I’m glad I don’t make recipes for a living. I had to buy the ingredients twice! I messed up the first one, and there is always something that happens to me like this, remember Adrian’s cake? But I am persistent and when I want to make something I need to finish it. At least I learned a lot during the whole process!

I learned that gelatin can not be combined with certain fruits otherwise it wont set! Can you believe that? I thought I wanted to use fresh fruit instead of canned and used fresh pineapple which gelatin doesn’t like! Who would of thought? I didn’t realize this until I made it and it didn’t set. I put it in the freezer and nothing, I read the recipe 20 more times and nothing. Until I decided to read the jello box and it was very surprising to me, it really says that it wont set with fresh pineapple, or kiwi or papaya but it does work with pineapple in a can! How crazy is that? I don’t make gelatin too much around here but now I know!

The un-molding part was a little hard for me. Make sure if you make this recipe that you have a good tray or plate that will accommodate your dessert size. I didn’t and it was messy plus I think I left it 10 seconds too long on the warm water. I was able to take pictures of my cut slice at least 🙂 Oh and Adrian helped me, he even had to go to the market again with me!

So with no much further ado I leave you the recipe, hope you make it, it’s delicious!

Rainbow Delight

– E S P A Ñ O L –
