So we’re already in summer and this is the season of grilling, lots of things are cooked on the grill and lots of invites to BBQs because of course, weather is perfect for it.
I’ve learned a few things in the time I’ve been living here. Usually at most BBQs, you’re not going to find steaks and sausages (what we are used to in Venezuela). you’ll find hamburgers and hot dogs. And I do like them but I’m not 100% fan of eating the same dogs and burgers at every BBQ we go plus I don’t eat red meat either.
Knowing this, I always think of alternative eats that I can make myself or that I can take to BBQs. That’s how it occurred to me to make these zucchini roll-ups that are even tastier with Mazola corn oil. As I’ve been mentioning before, there is a recent study that showed that corn oil is superior to extra virgin olive oil to lower cholesterol, I think it helps to know this!
Grilled Stuffed Cheese Zucchini Roll-ups
Ingredients:
- 2 zucchinis
- 10 oz of Queso Fresco cut into strips about 2″ long approx. (One package)
- 1/2 cup Mazola corn oil
- Salt and pepper to taste
- Mini skewers or tooth picks
Preparation:
- Soak skewers in water.
- Slice the zucchini very thin, you can use a mandolin or a potato peeler (the latter was the one I used). If you get very thin slices, use 2 together.
- Apply the oil with a pastry brush on both sides of the zucchini slices, add salt and pepper to taste.
- Grab a slice of cheese and place it on top of the sliced zucchini. Proceed to roll it and keep it closed with a toothpick. Repeat until all the cheese and zucchini are gone.
- Grill them over high heat turning only once for about 2 minutes each side.
As you can see these are very easy to make, but this would not be the only food I would eat during a BBQ get-together although it’s very healthy and delicious and can definitely accompany any meal on the grill!

ENROLLADITOS DE CALABACÍN CON QUESO
Receta de Enrollados de calabacín con queso a la parrilla
- 2 calabacines
- 10 oz de queso fresco picado en tiras de 6 cm de largo aprox. (un paquete)
- 1/2 taza de aceite de maíz Mazola
- Sal y pimienta al gusto
- Palillos o mini pinchos
- Remoja los palillos en agua.
- Rebana los calabacines bien delgaditos, puedes usar una mandolina para picar vegetales o un pela papa (este último fue el que yo usé). Si te quedan muy delgaditas las rebanadas, usa 2 juntas.
- Aplica el aceite con una brocha de cocina por ambos lados de las rebanadas, añade sal y pimienta al gusto.
- Agarra una rebanada de queso fresco y colócala en la punta de la rebanada de calabacín. Procede a enrollar y une con un palillo. Repite hasta terminar con el queso y los calabacines.
- Ponlos a cocinar en la parrilla a fuego alto volteando solo una vez.
